Sweet Potatoes Orange
Melt 1/4 cup butter in a cast iron skillet, add 2 cups sliced sweet potatoes, 1/2 cup cranberries, and 1/2 cup chopped pecans. Saute until done. Top with fresh orange slices. Yummmmy for the Feast.
Make a "heart of the cream" dessert this year. Use a special heart shaped mold.
But the Orange Cat prefers to have his heart orange, of course. Either top with a simple Mango or Persimmon Sauce (perhaps swirled in a heart shape??) or use Orange Jello heart shaped cutouts. Or just add a little bit of red and yellow food coloring when mixing and voila...................an Orange Heart for your Valentine's Day Dessert!
Stir together 1 lb of cream cheese, 1 and 1/4 cup of chilled heavy cream, and 1/2 cup of powdered sugar. Add 1 teaspoon of vanilla extract (or other flavoring of choice) and the food coloring if you are using it. Whisk together until it begins to thicken, then pour into the heart-shaped Couer a la Creme mold, following the instructions for use. It will need to drain in the fridge for at least 8 hours. So remember you need to start your dessert the day before.
Happy Valentine's Day from your buddy the Orange Cat.
